What is WSCAFE's pure instant coffee?
WSCAFE's pure instant coffee is extracted, filtered and dried from roasted and ground coffee powder which is roasted and ground from green, raw, unroasted coffee beans. The commerical instant coffee will be packed under the brand name of WSCAFE or customers' brand if they request to do 'private label coffee' with us. The pure instant coffee is the main and important ingredient for making coffee mixes, serving as instant espresso or baking coffee-based candies, confictioneries, bread or for canned coffee.
Pure instant coffee has four main types, i.e. spray-dried coffee, agglomerated coffee, freeze-dried coffee and coffee concentrate (aka coffee liquid, coffee syrup).
In Vietnam, pure instant coffee is, in many cases, called ‘1 in 1 instant coffee’ or '1 in 1 coffee'. It is sometimes called 'black instant coffee' just because it has black color after being brewed.
How is pure instant coffee made?
The processes for making pure instant coffee is sophisticated, just because of the complication of coffee itself. Unlike extracting other foods and fruits which are easier and less complicated, extracting coffee requires a modern facility with experienced specialists. However, we can simplify them as the following brief steps.
Selecting good green coffee
Coffee type: robusta or arabica or peaberries.
Quality: well-selected green coffee beans with good quality to avoid off-taste (bad taste).
Roasting and Grinding
Roasting: Green coffee beans will be loaded onto the modern roasting facilities to be roasted by heat and then we have roasted coffee whole beans. The roasted coffee whole beans will be "rested" a couple of days in silo sytems to fully develop aromas and tastes.
Grinding: We then grind roated coffee whole beans with powerful industrial grinders to become a very fine and smell-good coffee powder, ready for extraction.
Extracting and Filtering
Extracting and filtering are important steps which will decide the quality of the finished pure instant coffee. These two processes require experiences and precision. Overextraction or underextraction with the wrong pressure will definitely cause unexpected aromas and tastes.
Extracting: Extracting coffee means the finely ground coffee powder will be brewed in a huge brewer and rotated with a very high speed to extract the soluble substances of coffee which will be the main particles for instant coffee.
Filtering: The 100% extracted & brewed coffee will be filtered times by times to take out the soluble sustances and remove insoluble ones as coffee residues.
Concentrating and Drying
Concentrating will produce concentrate. Concentrate is a thick and sticky coffee liquid which contain soluble coffee particles. The concentrate can be used immediately or kept frozen for future usage. However, it is usually being dried to form instant coffee powder for easier storage and transportation.
Concentrating: To concentrate is to make the brewed coffee liquid become thicker and more sticky with a proper amount of water in it. Ideally, the coffee concentrate should reach to the amount that 2 gram of coffee concetrate can qualify to make a cup of espresso.
Drying: Because coffee concentrate needs have a strict storage regulation which should be kept in frozen conditions, drying the coffee concentrate to make dried instant coffee will be very helpful to store, reproduce, mix and transport while the quality still remains. Most importantly, dried instant coffee is the main ingredient for coffee mixes.
The coffee concentrate is also known as 'coffee liquid', 'brewed coffee', 'coffee syrup'. Coffee concentrate can be served directly as instant espresso drinks by adding milk, sugar, etc. Or, it can be dissolved immediately with other ingredients to make coffee drinks, coffee confictioneries, and so on. However, it requests a strict storage condition in frozen temperature.

How is the pure instant coffee consumed?
Like classic 3 in 1 instant coffee, pure instant coffee is served instantly and widely, it is primarily used in office, at home, in hotels and resorts, etc. It is also a good choice for seminars, exhibitions, canteens and fast food stores. However, the standard consumers of pure instant coffee seem to majorly use it as an instant espresso (with no other ingredients added). Some might add sugar, creamer by their own choice and favorite.
The application and consumption of pure instant coffee are wider than the one of 3 in 1 coffee. While 3 in 1 instant coffee are mainly consumed by individual consumers, instant coffee is being consumed and used by both consumers and corporates. Corporate customers will use it to make coffee-based products like coffee beverages, coffee candies and confictioners, coffee-based food items, etc.
How is the pure instant coffee packed?
Like 3 in 1 instant coffee, pure instant coffee easily absorbs moisture; more specifically, it attracts moisture, the proper package is very crucial. The common packaging preferences are sachets or sticks which have the net weight from 1.5 grams to 4 grams per single serve, in which 2 (two) grams are the most common standard.
Jars and tin cans are popular for packing instant coffee, too. Meanwhile, to our experiences, laminated pouches with resealable zip-lock and pillow packs are the most practically recommended option. The pouch might contain 80 grams, 100 grams and not exceeding 200 grams. The pillow packs should contain 10 grams or 20 grams which are equivalent to 5 cups or 10 cups for a coffee break in your office or at your home at once.
